California walnut kernels graded as light halves, sold shelled and by weight in a 500 g pack.

Walnut kernels are sorted on two things: colour and wholeness. "Light" means the pale-amber kernel colour that comes from a well-dried, well-handled crop and eats with low bitterness; "halves" means whole half-kernels rather than the pieces and crumbs at the bottom of a cheap bag. Both cost more to sort for, and both are what you taste.

Ours come from a single lot, never blended down with a darker or older lot to hit a price. Sealed in opaque bags with the packing date shown, because walnut oil turns rancid quickly in warmth and light.

Labelled as Californian, because that is what they are; nothing on this shelf is sold as something else.

How to use and store

Toast lightly in a dry pan or a low oven for five minutes to bring up the flavour, then use in salads, on porridge, in brownies and breads. Untoasted halves are best for stuffing dates and for kheer.

Sealed and cool. An opened bag belongs in the fridge or freezer — walnuts freeze well and thaw in minutes.
