Kashmiri Saffron (Kesar)
Also called Kesar, Zafran, Kong Posh, Kumkumapoo, Mongra
Kashmiri saffron — kesar in Hindi, zafran in Urdu, and kong posh in Kashmiri, the name of the crocus itself — is the red stigma of Crocus sativus, picked by hand in the three weeks either side of the first frost. Ours comes off the karewa terraces around Pampore, where the soil drains fast and the autumn nights turn cold early — the conditions that concentrate colour and aroma rather than simply lengthening the thread.

What you are buying, in practice, is grade. Mongra is the stigma alone, cut above the style, deep crimson end to end, and it is the only grade we sell under that name. Lachha carries a little of the pale style with it; it costs less, and it should. A thread that is red for its whole length has had the yellow removed by hand, which is slow work, and that is most of what separates one price from another.
Every lot on this shelf ships with its lot card and its laboratory report, and we reference the GI registry entry for Kashmir saffron rather than asking you to take the origin on trust. Saffron is among the most adulterated spices in the world — safflower, dyed maize silk and gelatine threads all pass at a glance — so we would rather hand you the paperwork than the story.
