Dried Figs (Anjeer)
Also called Anjeer, Anjir
Anjeer is sold two ways in India, and the difference is worth knowing before you buy. Pressed figs are packed into blocks or discs, which is cheap to ship and hard to inspect; whole figs are dried individually and keep their shape, their stem and their pale bloom. This shelf carries whole figs only.

Grade comes down to diameter and to how far the drying was taken. A larger fig has had more sun and more time on the tree, and it will be softer at the centre when you tear it open. An over-dried fig is leathery at the edge and pale all the way through, which is a fault rather than a style, and it is usually what has been rebagged from the bottom of a lot.
Colour is the other thing to watch. A fig that has been bleached with sulphur comes out uniformly light and stays that way; a sun-dried fig is uneven, tends towards amber, and develops a natural white bloom of fruit sugar on the skin that is often mistaken for mould. We do not bleach, so ours arrive uneven, and that is the point.
Sold by weight in sealed packs, with the drying season stated on the label.
