Raisins & Black Currants
Also called Kishmish, Kali kishmish, Black raisins
Black currant raisins are not currants at all — they are small, dark, seedless grapes, dried until they are almost black and considerably more tart than an ordinary kishmish. The naming is old and unhelpful, and it is the single most common source of confusion on this shelf, so it is worth saying plainly before you order.

The two things that separate a good lot from a poor one are stems and grit. Raisins are dried on trays, often in the open, and a lot that has not been properly sorted will carry both. Ours are sorted twice and we would rather lose weight to the sorting than pass it on to you.
Golden kishmish are treated differently: they are dried out of direct sun to keep them pale, which is why they stay soft and translucent where a sun-dried raisin goes dark and chewy. Both are honest products; they simply do different work in the kitchen.
Everything on this shelf is seedless and sold loose by weight. Raisins clump in warmth, which is normal and reverses with a few minutes in a cool place — it is not a sign that anything has gone wrong with them.
