Dried Apricots (Khubani)
Also called Khubani, Jardalu
The first thing to know about dried apricots is that colour tells you almost everything, and it tells you the opposite of what most people assume. A bright orange apricot has been treated with sulphur dioxide to stop it darkening. A sun-dried apricot with nothing added to it turns deep amber, then brown, and looks considerably less appealing on a shelf for exactly that reason.

Ours are unsulphured, which is why they arrive dark. They are dried whole in the Himalayan valleys where the air is thin and dry enough to do the work without help, and they are firmer and more concentrated than the soft, bright fruit sold in most supermarkets.
Grade here is about size and about whether the stone was removed before or after drying. A whole apricot dried on its stone keeps more of its shape and its perfume; stoning it first is faster and produces the flat, folded fruit that is easier to pack. We carry both and we label which is which.
Khubani softens beautifully in liquid and is worth soaking before it goes anywhere near a dish. Sold by weight, sealed, with the drying season on the pack.
