Dates — Ajwa & Medjool
Also called Khajoor, Khajur
Dates — khajoor across most of India — are bought on two qualities that rarely appear on a label: moisture and size. A soft date and a dry one of the same variety are different products in the hand, and a tray that has been sitting in a warm warehouse will have moved from the first towards the second whatever the packing date claims.

Ajwa are small, dark and soft, with a fine wrinkled skin and a mild, almost dry sweetness. Medjool run much larger, glossier and considerably sweeter, and are usually the ones people mean when they describe a date as caramel-like. They are not substitutes for one another and we price them separately.
We grade by count per kilogram rather than by adjective, so a large Medjool here means a specific size band rather than a marketing term. Each tray is packed sealed to hold its moisture, and we would rather move stock quickly at a sensible margin than hold it long enough to need reconditioning.
Dates keep well when they are kept cool and sealed, and badly when they are not. If a tray arrives firmer than you expected, a few hours at room temperature will usually bring it back — and if it does not, tell us within forty-eight hours and we will put it right.
